Cookinando Vegan Sweet Potato Noodles

Sweet Potato Noddles with Sauteed Vegetables

Portions: 3

Ingredients:
2 Large Sweet Potatoes
1 Bunch of Asparagus
8 oz Oyster Mushrooms
6 oz Fava Beans
2 oz Spinach
2 Cloves Garlic
½ tsp Thyme
½ tsp Rosemary
½ tsp Sage
4 oz Extra Virgin Olive Oil
Salt & Black Pepper to taste

Procedure:

1. Peel sweet potatoes, slice them very thin with the mandolin.
2. Cut the potatoes into fettuccine-size noddles.
3. Peel fava beans.
4. Slice mushrooms.
5. Chop herbs.
6. Chop garlic.
7. Cut asparagus into small pieces.
8. Saute mushrooms with 3 oz of olive oil. (The rest of the olive oil will be for garnishing.)
9. Add garlic, herbs, salt and pepper.
9. Blanch fava beans, asparagus and potatoes noddles for approximately 45 seconds.
11. Deglaze the pan with cold water.
12. Toss all the ingredients together into the saute pan. Add the spinach last.
13. Plate as shown or just be creative!

Remember to use organic ingredients. Shop from local farmers when possible.

Hola Amigos!

Chilean Sea Bass. Cookinando!Welcome to Cookinando, a bilingual cooking show in English with a touch of Spanish. My name is Herb Hernandez, the creator and director of Cookinando. My good amigo Heriberto Alanis will be cooking up some amazing dishes that are quick, easy and impressive not to mention delicioso. Today we shot video of the first dish, a Chilean sea bass with a corn relish and sauteed watercress. Que rico! Heriberto invited our friend Sophia to come by for a tasting. Heriberto was just finishing up in the kitchen when she arrived. She looked lovely in her sundress and brightened up the set. The talented eye and steady hand of Chloe Reynolds on camera captured all the finest moments. I’m excited to see what she does with the editing. Our friend John Maguire also swung by just in time for the tasting. After that Heriberto whipped up a great vegan recipe for me that will be next to shoot. It’s fantastic!
